All day we have been in the vineyards harvesting Pinot Noir grapes and we are very satisfied with the result – we picked half of the vines and got more than 4.000 kg. Tomorrow we will harvest the rest of the Pinot Noir vines.
We will first start processing the grapes tomorrow as we want to cool the grapes first. It is crucial because we want the grapes whole and intact throughout the sorting and destemming process as it can lend to more fruitiness and limit harsh tannin extraction.
