Optimal maturity

When we decide that a given variety and plot has reached optimal maturity, we put on our working clothes. This is the most exciting and demanding time of the year.

 

Harvest by hand

Our vines are the most spoiled ones ever, so of course we also harvest by hand. Hardharvesting prevents both damage to the plant and to the grapes so we can ensure that they arrive to the cellar in optimal conditions. Harvesting by hand also allows us to select only the best clusters and thus do a pre-selection ahead of next day’s work at the sorting table.

Small plastic boxes 

We harvest in small plastic boxes of approximately 15 kg to ensure the grapes do not get crushed under their own weight.

Cooling room

They are then brought immediately into the winery and put into our cooling room before they are processed the following day. Cooling them down keeps the quality fully intact from the moment of harvest till they are processed
