Colour turns from green to purple
Véraison, as they say in France, starts when the grapes have finished growing and start to ripen. For the red grapes, this is when the colour turns from green to purple. At this important time, both the aromatic compounds start to evolve their deliciousness and the physical ripening slowly starts kicking off.
