Our Cabernet helps us add plenty of structured tannins, spice and backbone into our reds when and where needed (Bonus info: its ‘sister’ variety Cabernet Franc is somewhat similar but works more on the spicy, herbal notes).

The two Cabernets originate from Bordeaux, France, where Cabernet Sauvignon reigns on the left bank and is the protagonist behind some of the greatest First Growths like Latour, Margaux, Mouton and Lafitte. Usually in a happy threesome with Cabernet Franc and Merlot.

Today, it’s planted in almost every wine-growing region around the world and for good reasons. It adapts well to a multitude of climates and retains acidity very well, even when it gets hot. Sugar levels never go crazy and the tannin structure it can add is simply next to none.

Our Cabernet is still one year away from giving its first fruit; hence you will not find it in our 2019 and 2020 wines. But we have great faith in it and will hopefully harvest the very first fruit from these plots next summer, 2021.

 

Fun fact: Cabernet Sauvignon is the child of a happy crossing between Sauvignon Blanc and Cabernet Franc. Speak of inbreeding.
